Chow mein originates from northern china. Chow mein is one of the signature dishes of chinese cuisine while chop suey is an american creation using chinese cooking techniques. However in chop suey the mixture of cooked vegetables and meat optional along with the sauces is served over already cooked rice or fried noodles. Chow mein noodles in the united states usually come crispy and fried with the sauce laced in the mixture and absorbed by the noodles.
Chop suey has many stories revolving the real score about where it originally came from. Chop suey is always made with rice whereas chow mein only uses noodles. A very basic difference between the two is that in chow mein the recipe itself includes adding cooked noodles to the cooking sauces vegetables and meat optional. Chop suey is accompanied by a thick sauce whose exact ingredients are determined by the chef while chow mein is served with soy sauce.
On the other hand chop suey comes served over rice and with a heaping ladle of sauce. The main difference between the two however has to do with the use of ingredients and how these are cooked and served. Chow mein and chop suey are both chinese stir fry dishes often found on restaurant and take out menus.
